If you follow my blog you know that I am currently moving into a new apartment, and with this… I finally have a kitchen to cook in. Obviously, I have been enjoying every last bit of this.
Do you have lots of veggies on hand? How about adding them to some quinoa for a delicious and quick meal? The best part about eating simple and eating clean? There are endless possibilities. You can just use what you have on hand, combine it, and enjoy. There is really no such thing as following an exact recipe. You just combine what is nutritious, fresh, and on hand.
Quinoa With Steamed Veggies

Combine Quinoa with steamed veggies for a delicious and nutritious meal!
Cook the quinoa according to the instructions on the package.
Cut and steam the vegetables. I did this stovetop with a steamer.
Combine both the quinoa and veggies in a pan and add the EVOO.
Simply use whatever vegetables you have on hand. Steam the veggies with the method of your choosing!
On the side, I whipped up a quick salad. Mine is iceberg lettuce and spinach (topped with extra slivers of the RAW squash, zucchini, red pepper, and red onion. I also added 1/2 avocado to the salad to coat the entirety of the salad (and take the place of dressing). This is one of the BEST ways to save the calories from dressing, but have all the flavor. Avocado is creamy and it coats salad very nicely.
