Oat bran might sound like something only your grandparents would eat, but fear not. When prepared correctly, oat bran is fluffy, filling and delicious.
Technically speaking, oat bran is the edible, outermost layer of the oat kernel. Like oatmeal, oat bran contains B complex vitamins, protein, fat, minerals, and heart healthy soluble fiber. When eaten regularly, oat bran (as most oats) may help to lower total cholesterol levels and can help to reduce the bad LDL and raise levels of good HDL cholesterol. On average, oat bran contains around 7 grams of protein and 6 grams of fiber.
Most importantly, it’s a comforting and delicious meal. Perfect for a snowy day like the one we are currently having on the East Coast.
Oat Bran Butter Swirl
1/2 cup of oat bran (or as much as you want)
1-2 tbsp of almond butter (or butter of your choice)
a sprinkle of Stevia
optional: small swirl of maple syrup
Prepare oat bran as directed on the box. Usually, you can add about 1 1/2 cups of water to the oat bran and microwave for about 3 minutes. While oat bran is still hot, add your butter of choice and allow to melt slightly. Start swirling around to mix in. Add stevia and/or maple syrup as desired.
