Easy Pasta Casserole

I have been making this easy pasta casserole dish for years! The basic recipe I found in Good Housekeeping magazine. It was a bare basic recipe. I just had to dress it up! The recipe needed veggies!

And this easy pasta casserole recipe is great to serve when company is staying over or you’re attending a potluck!

It’s actually one of my girlfriend’s favorite recipes. And since we could not meet up this holiday, I thought I would post it here so that she can make it. And you can too!

I know it is said that it taste better when someone else makes the dish. But I know, it will taste just as good if you make it too! Then you can invite me over. I’ll bring the wine.

Easy Pasta Casserole Recipe

Ingredients

1 lb ground beef or seasoned ground turkey
1/2 onion, chopped
3-4 cloves of garlic, chopped
2 zucchini, sliced
1 tsp olive oil
1 can of whole corn kernels, drained
1 can of Hunt's basil, oregano, garlic diced tomatoes
3/4 C shredded cheddar cheese
Salt & Pepper, to taste

Instructions

  1. Heat oven 325 degrees.
  2. Brown ground beef in a large skillet over medium-high heat, stirring often, 8 to 10 minutes or until beef crumbles and is no longer pink; drain well. Return to skillet.
  3. While ground beef is browning...
  4. In separate pan, heat olive oil over medium heat. Sauté zucchini and onion in pan for 7 minutes or until golden. Add chopped garlic and cook for 2-3 minutes more.
  5. Add zucchini, onions, garlic, corn, and tomatoes to the skillet with the ground beef. Mix. Season with salt and pepper to taste.
  6. I transfer my lightweight cast iron pan straight to the oven with the cover on. But you can just as easy pour the mixture mixture into casserole dish. Sprinkle with cheese. Cover with aluminum foil.
  7. Bake for 15-20 minutes. Take the foil off and bake for 5 minutes longer or until cheese is melted, gooey and slightly brown.
  8. Enjoy!

Notes

The type of sautéed veggies you can add are endless. Have fun! My child loves this dish and she is a finicky eater. Works well with a mixed greens side salad.

You can actually make the casserole the night before up to step 6. Then proceed the next day with step 7.
Kid friendly, mother approved!
