Fresh Seafood Ceviche
This is a quick, simple recipe you can use on short notice. This tasty seafood ceviche is sure to please a hungry crowd.
I say that it is a cheater recipe because I use pre-made fresh pico de gallo. Fresh Pico already has your peppers, tomatoes, onions, and cilantro. I do add more peppers though – see below.
Ingredients: (Cheater Recipe)
4 Cups Fresh Pre-made Pico de Gallo
½ cup Chopped Green Olives
1 Whole Chopped Fresh Avocado
2 Cloves Chopped Fresh Garlic
2 Whole Chopped Banana Peppers
½ Jalapeno Sliced
1 cup each – Cooked Shellfish (I used Scallops and Shrimp)
Squeeze of 1 whole Lemon and Lime
¼ cup Red Wine Vinegar
2 small cans Campbell’s Tomato Juice
Hot Sauce (Chula, Texas Pete, etc.)
**Mix together all ingredients (except for avocado) and marinate for about an hour. Add Avocado and serve with tortilla chips and belgian endive leaves for dipping.
