I've been busy these past two evenings wrapping up the first semester of my online graduate program. Almost finished, woo-hoo! I needed an easy dinner for last night and tonight and I didn't necessarily want to go grocery shopping. I used dried lentils and items I already had in my pantry to make these easy lentil burgers.
Lentil Burger Recipe: 1 cup dried lentils, rinsed 1/4 cup chopped walnuts, toasted 2 cloves garlic 1 tablespoon olive oil 1/4 cup dried breadcrumbs 1 egg, beaten 1 tablespoon cumin 1 teaspoon chili powder salt and pepper, to taste
Cook lentils in a small saucepan by covering them in an inch of water in a medium saucepan. Bring to a boil and then simmer covered for about 20-25 minutes. Let cool. Combine lentils, walnuts, garlic and olive oil in a food processor. Pulse until combined. In a large bowl, mix lentils, walnuts, garlic, egg, breadcrumbs and spices. Form into 4-6 burgers.
In a skillet, heat another 1-2 tablespoons of olive oil. Saute the burgers for about 6-7 minutes on each side on medium heat. Serve on a bed of lettuce with a dollop of yogurt on top.
