Easy Banana-Coconut Smoothie

My recent most favorite smoothie is super easy (super nutritious, too!) and can be whipped up in just a couple minutes. I know this because I’ve rushed out the door with it in a mug many times after throwing the ingredients into my Magic Bullet :). The recipe comes from the Nourishing Traditions cookbook and has a couple of good variation options.

The basic recipe is to combine 1 ripe banana with 1 1/4 cups yogurt (sometimes I only use about 1 cup), 1/4 tsp stevia, a sprinkle of nutmeg, 2 Tbsp coconut oil, 1 tsp pure vanilla extract, and if desired two raw free range/organic egg yolks. If you would like to omit the egg yolks, just adding a little bit of water to make a smoother consistency for blending will work fine. And if I’m not rushing too fast I also add a sprinkle of flax seeds into the mix, too.

I use plain homemade yogurt (and will post how I make that from raw milk this week) which has probiotics, but you can also find brands at the store that have live active cultures. Also, this is one recipe where I find no aftertaste from the stevia, but if you prefer a substitute, the cookbook says that you can use 3-4 tablespoons pure maple syrup. If anyone tries this, please let me know what you think as I  like the stevia so much I’ve never made it with the syrup.
