Ease Your Way into Paleo (EYWIP) week 3

EYWIP week 3: ALL DAY WITH NO GRAINS

So last year’s week 3 post was written with summer in mind. It was June and cookout season was right around the corner. It’s pretty easy to eat whole foods in the summer because so much is in season. Now, I write this second round of week 3 and it’s in the middle of January and it’s snowing where I live. But the good news is there is no shortage of recipes to help you out. In my original post I give 4 recipes with links to grain free dinners. Here is an excerpt:

When I first started out on grain free dinners, I would take recipes that we were used to and make them grain free. Your typical pasta dish can be served without the pasta. I love chicken piccata. When I order it out I ask for them to hold off on the pasta and give me a double order of the vegetable. Most restaurants used grilled chicken & not breaded chicken so that makes my life even easier. Think about your favorite pasta dish; could you still eat it without the pasta? This is a great first step that can last you a while until you are ready to experiment with new versions of old favorites. Paleo lasagna  is an awesome recipe that’s easy to make, makes a ton, and freezes well. When I make it, I freeze the leftovers into lunch size portions for work.

When I was transitioning to a paleo lifestyle, I found that dinners were the easiest to make. Meat and vegetables is pretty standard fare and doesn’t take most people out of their comfort zone. Here are some of my family’s weekly dinner go-to meals:

Prosciutto Chicken - I call this company chicken because it’s good enough to serve for company (which I have) yet it’s easy enough to be a mid-week meal. fitmomsfullplates-chicken

Tacos ( I make the recipe in the link, I just serve it as a build your own taco and not as a trifle.)

Chicken Fingers -My kids absolutely love these. Make a big batch and stick some in the freezer for the night you just don’t feel like cooking.

Crock Pot Meat Lovers Chili - you seriously take all the ingredients and dump it in and turn it on. That’s it.

Italian Sausage Kale Soup - this is probably one of my favorite soups. This is the only way I can get my kids to eat kale. Easy and delicious. Make a lot and freeze it in single serve containers to pack a quick lunch. fitmomsfullplates-kalesoup
