during the tomato season – tomato tabouleh

This summer I spent a lot of time decorating and re-decorating the patio in the garden and unfortunately too little in the garden itself. The time was just never enough to do both, so I concentrated on the primary task. Of course, the garden was not left unplanted, just this year my parents did most of the job.

And they did a wonderful job! The garden is flourishing with tomatoes, carrots, red beets, beans, cucumbers, all kinds of spices and many more. But our most favourite vegetable is and will always be, the home made tomato. It’s just so full of flavours! Nothing like the store bought one at all.

I wish you could all taste the sweet, soft, ripe tomato for yourself and see the difference!

And with so many tomatoes around, another favourite for the summer is this simple, yet amazingly delicious tomato tabouleh. Actually, the original tabouleh requires some sort of cereal, like bulgur, cous-cous or something else, but I prefer mine purely raw. Tomatoes, parsley and some onions if you like them.
Simple and tasty.

tomato tabouleh

3 ripe tomatoes
a bunch of parsley
1 onion
salt & olive oil

1. Cut everything into very small bites.
2. Add the seasonings and mix well.
3. Enjoy with a cup of your favourite white wine and a company, because as some people say
