What a great mix. Right? First off, let’s talk about that little place called Ikea. After yesterday I will admit I like Ikea, not love. Here are the reasons:
- They scam you into going around the WHOLE store.
- You go in for a chair and you get..A chair, 2 night stands, an easel, a rug, a basket, a fake planet, chalk, markers and paper!
- The cart, no matter how strong you are, always goes to the left!
- Once you check yourself out, you have to pray to God that he will watch over your stuff while you run to get your car.
- Once you get back and thank the Lord it’s still there, you then have to load the 88 pound chair into the truck. This is when I love the fact I workout!
For some reason I’m always exhausted on the ride home from Ikea. Then comes the fun part……you put it together!!!

I put that baby together wrong 3 times! 3 times! Why did I keep going…because I love my Hubby!

I told Adam that I got a different nightstand because that’s the POSH way to do it and he said, “Oh! Is that a new blog word!” Yes Hun, yes it is! Here is my petite, less expensive, POSH nightstand…

After I put together the stuff I didn’t need, I started working on the 88 pound chair. By the way, it was the easiest thing to snap together! Here is before:

I am really hoping this chair will make me read more! We shall see. I like Ikea for one reason and one reason only. It’s cheap! I haven’t found any Big Kid furniture for our room yet, so I thought this will do until then. You can call me cheap all you want! I will just say “Nee-Ner-Nee-Ner Ha-Ha” when I have money in my savings account. It’s only fair! J/K!
After all that madness, is was time to get my drawing on!

Dylan was with us for about 20 minutes. Once he drew a guy skateboarding, outside he went! In come the accidental Curry Beef Burritos.

I meant to put in some chili powder to give them a little kick, but instead some curry powder made its début. I put curry powder in with my pumpkin enchiladas, so I knew it would be okay.

They turned out a success!
Oops Curry Beef Burritos:
- 1 lb Lean Ground Beef
- 1 Tb Sunflower Oil
- 1 Bunch of Cilantro
- 6 Green Onions, Diced
- 1 Green Bell Pepper, Thinly chopped
- 1 Can diced Tomatoes, Drain 1/2 of can
- 4 Flat Out Pitas
- 4 oz Colby Jack Cheese
- 1 Can Refried Beans or Pinto Beans
- 1/4 Tsp of each: salt, pepper, garlic powder, and CURRY powder
- 1/8 Tsp Chilli Powder
Pre-heat oven to 425. Warm sunflower oil in skillet. Add meat and brown for 5 minutes. Add onions, bell pepper and all spices. Cook until meat is brown. Add cilantro and tomatoes. Place 1/3 cup of beans on the pita pocket, then add a scoop of meat mixture. Sprinkle a small amount of cheese over meat. Roll the pita up into a burritos and add more cheese on the top. Cook the burritos for about 8 minutes or until cheese is melted.
I think I am going to go read now.
