I needed a side dish to go with my quesadillas on Wednesday night, so I decided to go with a Mexican theme and roast them with cumin, paprika, and a pinch of cayenne for some heat.

I have no idea why, but I have been eating them every single night for the past two weeks.

These can be eaten hot or cold, as a side dish, or even for a snack
Ingredients
1 tsp ground cumin
3 TBS olive oil
3/4 tsp paprika
Pinch of cayenne pepper
Salt and pepper, to taste
2 pounds red potatoes, wash scrubbed, and quartered
Directions
Preheat oven to 400*.
Toss potatoes in a large roasting pan with oil, cumin, cayenne, paprika, salt, and pepper.
Roast potatoes, turning occasionally, until golden brown and tender, about 45 minutes.
Roasted potatoes are a staple in my house.
