Cumin Roasted Potatoes

Roasted potatoes are a staple in my house.

What am I going to eat with my burgers ?


Actually, I didn’t eat this with a burger…

I know right? What is wrong with me?

I needed a side dish to go with my quesadillas on Wednesday night, so I decided to go with a Mexican theme and roast them with cumin, paprika, and a pinch of cayenne for some heat.



Am I the only one that is absolutely addicted to roasted vegetables?

I have no idea why, but I have been eating them every single night for the past two weeks.

I want to say that it has something to do with the cold weather. Turning on the oven and making a warm, comforting meal is just pure bliss after a long day. Mmm…

These can be eaten hot or cold, as a side dish, or even for a snack ;)


  • 1 tsp ground cumin
  • 3 TBS olive oil
  • 3/4 tsp paprika
  • Pinch of cayenne pepper
  • Salt and pepper, to taste
  • 2 pounds red potatoes, wash scrubbed, and quartered


  1. Preheat oven to 400*.
  2. Toss potatoes in a large roasting pan with oil, cumin, cayenne, paprika,  salt, and pepper.
  3. Roast potatoes, turning occasionally, until golden brown and tender,  about 45 minutes.
