In the winter I always, always crave soup. There’s nothing quite like a warm bowl of soup and some crusty bread. However, with the winter we’ve been having, it hasn’t exactly been soup weather. Until this week that is!
With snow on the forecast, I found myself wanting soup. The idea of butternut squash soup sounded absolutely perfect, but I wanted something super easy. I dug around online and in my cookbooks and threw together a yummy, filling and hearty soup that was ready to eat as soon as we got home from Crossfit! This was easy, and required almost no cutting, since I took a lot of help from the store (I honestly hate cutting up butternut squash and will always spend extra to have it pre cut if that option exists).
2 packages pre cut butternut squash
2 apples, cored and cut up (I had Galas on hand)
2 onion cut into pieces
3 cups vegetable stock
1 cup water
salt and pepper to taste
cinnamon to taste
Throw everything into the crockpot and cook on LOW for 6-8 hours.
Transfer soup in batches to a blender, or use an immersion blender to puree. Done.
