I have been known to eat an entire pan of cauliflower by myself either straight out of the oven or cold from the fridge. It is one of my all time favorite foods when it’s cooked. Raw, not so much (unless I have a really yummy dip like Red Pepper Hummus to go with it!). It is an amazingly adaptable veggie. Here are some great recipes using cauliflower including my own Cheesey Roasted Cauliflower:

1 large head cauliflower
2 tablespoons tallow (or whatever fat you want)
1/2 cup nutritional yeast
Heat oven to 350. Cut up cauliflower into small pieces (the smaller the better cooked they will be) and either put into a bowl or plastic bag. Liquify chosen fat and toss cauliflower to coat. (sometimes I will use a sauce brush to spread it around).
Sprinkle seasoning to taste (I go by smell). You can always add more after it’s done. Cover with foil and bake for 25-30 minutes until desired consistency is reached. I like mine to be soggy and mushy, so I leave the foil on for a little bit (if I can wait that long, lol). Add more seasoning if desired.
