Last time I posted it was Friday and rereading that post makes me want the weekend back more than ever! Here’s a little rundown:
Friday: Before the Cardinals game (where they retired former head coach Tony LaRussa’s number), we needed dinner and ended up sitting in so much traffic that we didn’t have enough time for Food Truck Friday. However, we were able to grab dinner at Epic Pizza and Subs , next to iTap in Soulard. Really tasty buffalo chicken pizza, and I love that they deliver to your table in iTap! We’ll be back, especially for their giant cupcakes.

Saturday: I worked, and Matt had a bachelor party, where he attended yet another Cardinals game!
Sunday: We celebrated Mother’s Day with Matt’s family and, earlier in the day, I made this little gem:
This recipe, inspired by a recent post from Joy the Baker , has three of my all-time favorite ingredients, married together in an afternoon snack: polenta, goat cheese, and honey. Add in your preferred crunch (or none at all) and snack away!
Creamy Goat Cheese and Honey Polenta by Every Little Thing Keywords: side snack appetizer vegetarian
Ingredients (serves 2)
Note: cornmeal cooks in about half the time of polenta, so keep that in mind.
Bring 4 cups of water plus the salt to boil in a heavy-bottomed saucepan. Slowly whisk in the polenta/cornmeal, whisking constantly until mixture is smooth and begins to get thick. Reduce heat to medium low and continue cooking, whisking often, until thick and creamy (30 minutes for polenta, 15 minutes for cornmeal). Add butter and goat cheese, leaving about 2 tbsp of goat cheese to crumble on top. Whisk until incorporated and season with salt and pepper. Crumble the remaining goat cheese on top, then drizzle with honey.
As I posted with my polenta and veggies recipe, I use Bon Appetit’s method for creamy polenta. You can serve this a million ways: with shrimp, crackers, roasted nuts (a la Joy the Baker ), veggies, or just eat with a spoon, like we did.
