Cream of sweet potato might just be my favorite — served hot or cold. Whenever we BBQ during the summer I throw a couple sweet potatoes on the grill just so that I can make this soup.
Cream of sweet potato soup (dairy free)
Serves 2-3
Ingredients
2 cups sweet potatoes, mashed (about 2-3 potatoes)
1 clove garlic, minced
1 tsp. fresh ginger, minced OR 1/2 tsp. ginger powder
1 tbsp. peanut butter OR almond butter OR coconut butter
1 1/2 cups almond milk OR coconut milk
pinch of salt
Throw 2-3 sweet potatoes on the BBQ (wrapped in foil) or preheat oven to 400 degrees F. Line a baking sheet with foil.
Wash the sweet potatoes, place them on the baking sheet and bake them in the oven until they are tender all the way through (a fork should go right through the potato).
Peel the skins off the potatoes. Put all ingredients into a blender (sweet potatoes, garlic, ginger, peanut butter, almond milk, and salt) and blend until smooth. Add almond milk if you desire a thinner consistency.
The goodness doesn’t stop at the soup.
Take a couple of ingredients out of the soup (almond milk and garlic), put some sweetness and cinnamon in the soup, and (shake it all about) you have an amazing sweet potato .
Sweet potato pudding (or pie filling) — gluten-free, vegan, no added sugar, dairy free
Ingredients

1 Tbsp. coconut butter or nut butter
1/2 tsp. cinnamon
pinch of salt
vanilla , 7 drops
Throw 2-3 sweet potatoes on the BBQ (wrapped in foil) or preheat oven to 400 degrees F. Line a baking sheet with foil.
Wash the sweet potatoes, place them on the baking sheet and bake them in the oven until they are tender all the way through (a fork should go right through the potato).
Peel the skins off the potatoes.
Put all ingredients into a high powder blender and blend until smooth.
Eat it right out of the bowl or put it into this yummy crust.
Raw almond crust (gluten-free, vegan, no added sugar, dairy free)
Ingredients
2 dates, pitted
1 tsp. maca powder
1 tsp. ground flax seeds
1 Tbsp. finely chopped almonds
1/4 tsp. cinnamon
pinch of salt
Mash all ingredients together and form a little crust. I did it by hand.
Scoop the sweet potato pudding into the crust.
Makes a fabulous nutrient-rich !

Question –> Have you used maca powder before? This was my first time using it. It has an interesting taste, which is difficult to explain. I don’t like the flavor by itself but it tastes fine when combined with other ingredients. Some research studies have shown that Maca has favorable effects on energy and mood, may decrease anxiety and improve sexual desire (can I get a woot woot for the last one). Anyway, the research is still limited just as it is with almost any plant or herbal remedy so use at your own risk muahahahah….
