Cranberry, Pecan, and Goat Cheese Salad

Hello everyone! Did you have a good night?

Tuesday Night

After this afternoon’s workout   , I picked up Ben from the train station and came back home for a shower.  Ben had a doctor’s appointment tonight, so I wrote this afternoon’s post while he was gone, hoping to eat dinner together.  Once Ben came home it was after nine, so while he grilled the steak I had taken out for dinner, I opted for something a bit lighter since it was getting late.  

In my local grocery store, I had recently found Earthbound Farm Organic Sweetened Dried Cranberries.

When you look on the ingredient list of most dried fruits, the second ingredients is 9 times out of 10 sugar, but not with these!

This time the ingredient list was a healthy one, and the nutrition facts were fantastic too!

I combined many of my favorite flavors to create a Cranberry, Pecan, and Goat Cheese Salad!

Mixed greens (this mix was romaine, endive, and ridicchio) was topped with shredded carrots, 1/3 cup of dried cranberries, 1/4 cup of chopped, lightly toasted pecans, and about 1 oz. of goat cheese.  The salad was then lightly dressed with 1/2 tablespoon of olive oil, 1/2 tablespoon of red wine vinegar, a pinch of Kosher salt, and some freshly ground pepper.

What? Did you think I’d let you down ?  

The soft, tangy goat cheese combined with the crunchy pecans and sweetened cranberries tasted like Thanksgiving on a plate.  :)  I bet a piece of grilled chicken on top would have delicious too!

For my side I thinly spread some  Athenos  Artichoke and Garlic hummus made with 100% olive oil

on two slices of toasted,  Arnold ‘s Whole Grains, 100% whole wheat, Double Fiber Bread.

The hummus was very flavorful, and the whole wheat toast really made the meal complete.
