Cranberry Almond Oat Bran Muffins..so quick, so easy, so yummy!

I don't know what got into me this morning! I woke up (before my alarm) at 6:30 am with a hankering for muffins...warm, homey, healthy muffins. These took 5 minutes to whip up, 15 minutes to bake, and they surpassed Skinny Beast's litmus test for both taste and health stats. They each have less than 150 calories, about 3 grams of fiber, 4 grams of protein, no cholesterol, and hardly any sodium. The main ingredient in these little babies is OAT BRAN. Here are just some of the benefits of adding oat bran to your diet *Oats reduce blood glucose and insullin responses *Beta-Glucan found in oats can enhance the body's immune response *Has B complex vitamins, protein, minerals and heart healthy fiber that can lower cholesterol
2C oat bran
1/4C brown sugar
2t baking powder
1C skim milk
2 egg whites
1/4C agave nectar (or honey, but agave has a lower glycemic index-better for blood sugar)
2T oil
1/4t pure almond extract
1/4C almonds
1/4C dried cranberries
Preheat oven to 425, line 12 cup muffin pan with paper liners, spray bottoms with PAM, mix all ingredients in a medium bowl, fill cups equally, bake for 15 minutes...That's it!!
