counting the hours until happy hour (s)

It’s Friday!! I mentioned this in one of my first posts, but even then working from home, and now just sitting at home, Friday’s still have special meaning somehow.  Maybe I just feel Hoagie’s pain and am excited for him, who knows.   I suppose it probably has more to do with the fact that we usually have something planned for the weekends aside from: wake up – green monster – gym -lunch- errands – dinner – tv - take pictures and blog about all previous activities- bed.  

Again, not complaining.  I will enjoy it for now, I will. 

Last night’s dinner involved the crock pot.  On Wednesday I had marinated some chicken in teryiaki sauce with the plan of doing something with it that evening. 

We ended up going to the Soup Box however, best idea EVER, so I had it to use on Thursday.

I did a bit of googling, and found this recipe: http://www.crockpotchicken.net/bbqteriyaki-crock-pot-chicken.html .

I only was using a 1 lb chicken breast cut up into pieces, so I modified this recipe a bit. 

First I rubbed 2 tbsp of minced garlic in the bottom of the crockpot.  I then dumped the chicken pieces in.  I won’t post a picture of the raw chicken, I don’t want to disgust the non-meat eating folk. 

Moving on, I combined the following ingredients in a small bowl:

1/3 cup ketchup

1/3 cup brown sugar

2 tbsp chili paste (yowzers!)

1 tsp bail

dash of s&p

There are a few extra things in that picture that I didn’t end up using.  I mixed this all up and dumped it on top of the chicken.  You see, I was in the mood for something spicy.  I, unlike Pam Beasly, am not having a baby.  Therefore I don’t have to do the opposite of eat spicy food.  AKA, I do not have to shove the spicy food up my butt, accordingy to Kevin Malone. 

LOVED last night’s episode of the Office.  Kevin may have been my favorite charachter, but they all had their moments. 

 I set the crockpot on low and away she went. 

This went on for approximately 6 hours.  I tested the chicken and it was TAST-EE.  I considered for a moment shredding it and making it into pulled pork.   Then I remembered that fateful day at Citizens Bank Ballpark involving a pulled pork sandwich, a Hoagie, and a swollen trachea, and I decided to leave it alone.  If you don’t know what I’m talking about, consider yourself spared. 

For sides I steamed some broccoli and prepared some rice.  I also had 1 sweet potato and 1 white potato to use so I chopped them into fry-like pieces, tossed them with 2 tbsp olive oil and basil, and baked them at 450 degreees for 25 minutes.  Perfection.

This was a good meal, and we thoroughly enjoyed it while watching the Thursday night NBC lineup.  We also played a rousing game of ‘find Waffles the cat’ before bed. 

Hoagie won. 

Today has been uneventful and nothing worth mentioning has occured.  Green monster, ham and cheese sandwich, and 5 miles.

The rest of my time has been absorbed by wedding invitations.  I don’t want to hear any comments about my polar bear or American Flag stamps, it’s all they had.   As I have a slight obsession with bears, Hoagie doesn’t believe me.  

I am now anxioiusly awaiting the hours of happiness occuring later today, and most likely a good meal of food afterwards.

I’m extending the Arnold’s Giveaway until tomorrow morning.  I’m just thrilled I have enough comments to pull names out of a hat!  I really didn’t want to have to resort to Hoagie typing fabricated comments for Jackie and Waffles, so thank you.
