Did you guys watch the Superbowl last night? I was pretty ambivalent to the game since I’m not a particularly big fan of the Giants or the Patriots, but I still enjoy a good Super Bowl Party! Yesterday Vince and I headed out to one hosted by a couple of our friends. It was a big gathering and you know what that means…tons of food! There was 7 layer dip, chips, cookies, cakes, fruit salad, and the most incredible homemade chili I have ever had.
I am a huge chili fan. Few foods are more comforting than a thick bowl of chili on a cold winter day. Yesterday’s chili was hot and spicy! I had a large bowl of it and topped it off with some chips and dip. Not a very good idea for the tummy in hindsight!
Since no one at the party actually had a preference of teams, we played a game called Squares. Each person buys a certain number of squares that are randomly assigned coordinates. After each quarter, if the last two digits of each team’s scores are the coordinates of your particular square, you win a certain amount of money from the pool. The Grand Champion is crowned at the end of the 4th quarter and that person wins most of the moolah.
Guess who that was this year? This girl! Woo! We bought squares for 50 cents each and I walked away with the final prize of $20.

Workout
Well, this morning I woke up feeling really sluggish. I guess a night of greasy chips, chili, and dip will do that to a girl! I knew I’d feel much much better if I got my body moving so I took myself to the gym. I also wore my new workout clothes, which made me feel extra motivated.
My workout consisted of 15 minutes on the treadmill at 6.0mph at 1%, followed by 15 minutes of Elliptical….enough to break a sweat!
I’ve spent the rest of the day chugging water. My body has felt so dehydrated from all the salt I ate yesterday so it hasn’t been very hard. I feel so much better now!
Dinner
I came home late from work and immediately headed to the grocery store. We were in desperate need of some fresh produce in this household and came back with a plethora of goods, including turnips and kale. I made some kale chips on Saturday and they turned out wonderfully!
Easiest three ingredient dish ever.
To make:
- Cut kale into 1/2 inch thick pieces (excluding stem)
- Toss in olive oil and salt
- Bake at 275F for 20 minutes, flipping halfway
They come out amazingly crispy! It’s no regular potato chip, but it’s a pretty yummy and healthy alternative!
This week I’m excited to try to make turnip fries. I’ve had them before deep fried and I’m hoping to replicate this in a baked form!
It was late and we were tired, so we opted for grocery store sushi for dinner.
Yum. Now for some fresh fruit and Real Housewives of Beverly Hills…
