Earth Balance recently introduced an organic coconut spread to their line of products and sent me a coupon so I could try it out (lucky me!). It’s lactose free, gluten free, soy free and vegan so it works into almost any diet as a flavorful butter substitute.
At first, I tried it out on simple stuff like waffles and bagels–a perfect way to jazz up breakfast for a toddler who was solely hooked on sugary syrup. I then progressed to melting it atop freshly steamed jasmine rice. YUM. Finally, I used it for baking. I found this recipe for an oatmeal apple crisp and substituted the coconut spread for the butter. Between my husband and my dad visiting, the crisp did not last but a couple of nights in our house. I’m glad I got introduced to it and am happy to “spread” the word!
