Cookies for breakfast!!!

No make-up...Must be early!
 
Yep! I said it...cookies for breakfast. Well, it is just one cookie and you could have it any time of the day, but I have chosen to have it for breakfast the last couple of days! HaHa! Why not? It is sugar free, very little fat and it has a protein kick. That, my friends, is fabulous!Let's gather the ingredients! Some things are missing-They messed with the 'flow'!
Oatmeal Power Cookie3 Tbs. 100% Liquid Egg Whites1/4 cup milk of your choice (I used Good Karma Unsweetened Flax Milk) 1 Tbs. Pumpkin puree or Unsweetened Applesauce (I used my sf pumpkin butter) 1 tsp. Vanilla1/2 tsp. Maple flavoring 1 packet SweetLeaf Stevia or Liquid (I used English Toffee today, liked the packet better) 28g Your favorite instant oatmeal (I used BetterOats Maple & Brown Sugar)1 Tbs. Bob's Red Mill Coconut Flour1 Scoop Protein Powder (I used Vanilla Aria ) 1/3 tsp. Baking Powder1/8 tsp. Baking SodaCinnamon to taste  Combine the liquid ingredients. Stir in the remaining ingredients.Smooth into a cookie shape on a cookie sheet prepared with nonstick spray.  Don't spread it too thin. It will not spread in the oven, so you want it your perfect cookie thickness!I sprinkled mine with additional cinnamon and a touch of SweetLeaf.  Kind of looks like a big pancake!
Bake in 350 degree oven for approximately 15 minutes. You want the edges to just start to brown. I took mine out too soon this morning and it was not as crispy on the edges as I like. Bakes up great!  Serious cookie goodness inside!
Allow it to cool a minute. Remove it carefully, even with the spray it still requires a little help from a spatula.If you want, you can put it on a plate and have it with your coffee. Take time to enjoy it!

I'd call that a good breakfast, wouldn't you? I am going to play with it a bit more and see how high I can bump the protein without messing with the texture. But this thing is good! I hope you try it and enjoy it. You are already enjoying oatmeal anyways, why always eat it the same old way?!
Oh, and to keep you updated...It is Day 8 of the #RWRunStreak - I have run every single day and have logged 19.15 miles. One day I cooled down with a 1.1 mile walk...so along with my usual strength & cross training, I have logged over 20 miles in one week!
