Cookie Monster Cure!

Whatever your food and fitness goals may be...
I can pretty much guarantee that you get a serious case of cookie cravings!
It is probably one of those things that is attached to our childhood.
I remember my Mom making my Grandma's recipe for sour milk (Buttermilk) cookies.There were three little raisins that created a cookie 'face'.Cookies = Comfort Food!

I am not exempt to the attack of the cookie monster craving.Because of this, I have been messing around with some ingredients and trying to come up with a quick craving killer. I threw together the simplest of ingredients and it was a success!
Meet the cure to the Cookie Monster Craving!This guy is a quick and simple microwaveable, single serving cookie.Pretty tasty, too!Keep in mind, there are a whole lotta things that I don't/can't eat.So creativity is key!
Cookie Monster Meets Coconut Flour & Cacao Cookie 1 Tbs. 100% Liquid Egg Whites2 Tbs Coconut Flour1 tsp. Vanilla Extract1/2 tsp. Baking PowderEnough liquid to create a cookie dough consistency. (Milk or water would be fine)Stir all the ingredients together until you have a nice dough.Stir in 1 tsp. Cacao NibsSpread onto a microwave safe plate. Heat on high for approximately 2-3 minutes.
*Tips: You can add stevia if you would like a sweeter cookie.You could add some chopped chocolate or chocolate chips instead of the nibs.The cookie will be pale, as shown.Butter and brown sugar give cookies their golden color, so don't expect that!You could bake this in the oven at 350 for probably 10 minutes, or so. Just keep an eye on it.I cooked mine long enough for it to crisp.Less time will give you a softer cookie.Be sure and spread it reasonably thin, as it will not spread when it cooks.Enjoy!Make it your own!
