Chicken is one of my favourite meats along side fish. However the way I cook chicken is somewhat different to the way I see others cook it.
I make a point of cooking my chicken this way because I know it is healthier. So I do this to my chicken before I use it in any other dish!
low sodium chicken stock cube (not a must)
Cooking time 15-20 minutes
Using defrosted chicken breasts, boil some water in a pot and add the stock cube. Add the chicken and let boil for 15-20 minutes depending on the thickness of the breast. Drain the chicken and let cool. I use this chicken in salads, pastas, sandwiches and stir fry’s.
If you are using this chicken in another dish cooking it this way automatically means that you do not need to fry chicken or cook chicken for long amounts of time which often dries it out. I love cooking chicken this way and using it in the following days on a chicken sandwich rather than using processed meats.
