Cook it Once & Eat it Twice: My Delish Stuffed Peppers #Recipe

One of my favorite dinner meals… You can even make the night before so all you have to do is pop in the oven! I’m eating my leftover pepper today for lunch. DSCN3386



1 pound ground beef, I use grass-fed

1 pound ground Italian sausage

6 large bell peppers, sliced stem down into halves (I like red & yellow)

1 box, Pomi tomatoes, chopped, lightly drained

1 jar low sodium spaghetti sauce

2 tsp oregano, dried

Salt & Pepper, to taste

2 cups mozzarella cheese, shredded

1/2 c parmesan, however you like it


Directions: Preheat oven to 375 degrees. Place cleaned and halved peppers in large baking dish and set aside. This recipe makes 12 halves so I usually make a big pan and a small pan. In a large skillet, brown the beef and sausage. Cook through. Mix in tomatoes, sauce, oregano, salt and pepper. Spoon sauce into pepper halves until heaping. Top evenly with mozz & parmesan. Bake loosely covered with foil approximately 30 minutes, then uncover and bake an additional 10 minutes. Let sit about 5 minutes. Enjoy!!
