Congo Square [re]mix

A little bit [more] chocolate makes every thing a little bit [more] better.

Exhibit A: The Congo Square -noun, a nothin' but good tastin' cookie bar that is a cakey-like dessert and also commonly referred to as heaven in an edible form.


I took this wonderful recipe from my mother's cook book and put a CFF spin to it. Her recipe mixes chocolate chips inside of the batter as opposed to m&m's and is topless. haha, aka she doesn't melt additional chocolate on top. She calls her bars Congo Squares and I call mine m&m Cookie Bars.


m&m Cookie Bars-2/3C butter-2 3/4C flour-2C brown sugar-2 1/4t baking powder-3 large eggs-1t vanilla-pinch of salt-1 1/2C milk chocolate chips-1/2 bag mini m&m's
Directions: Preheat oven to 350 degrees. In a large bowl, mix together flour, brown sugar, baking powder, and salt. Then, add in the rest of the ingredients: melted butter, vanilla, and eggs, and m&m's. Your dough will become pretty thick. In an 11x17 inch pan, evenly spread out your cookie dough. It may seem like a thin layer of dough, but it WILL expand! Bake for 30-35 minutes or until it begins to turn golden brown. When your bars are cooked, immediately top them with 1 1/2C of milk chocolate chips. Use a knife to spread an even layer of melting chocolate over your bars. Let cool before cutting.

Today was a lot of fun. The mom, sister and I went on a little CC--> skiing adventure to Whitnal Park. The trails definitely could have used a good two more inches of snow. Come on Wisconsin... I'm giving you a C- for winter weather this year.


After a few hours of skiing, we warmed up in Gemma Rae's Cheesecake Cafe. It was a super cute Italian-themed bakery. I got a cup of "Icing on the Cake" coffee. You know me, I go bazerk for flavored coffee!
Hokay, the sis and I are running to the Sprint store to pick up a replacement phone. I accidentally demolished the lcd screen on my phone. oops. I am so ready for an iphone.
