I grew up in what’s known as ‘the amish country’ surrounded by flat fields, fresh farm scents and hearty fare.
One of my favorite dishes as a child was chicken pot pie, a meal that my mother and grandmother mastered.
This is the perfect time of year for pot pie, so I decided to create my own version free from ingredients that don’t agree with me.
These days I’m cooking more in the kitchen, but that doesn’t mean my meals are fancy. Rather they are made up of simple, whole ingredients that I tolerate and taste good together. This means you’ll be seeing many repeat ingredients in my recipes, and some of them might even surprise you. It also means that I have to keep dishes simple because I tire quickly after cooking nearly everything from scratch.
