Dana came over for a lunch date at "Spa Raik" today (aka--my condo). She looks amazing, she gets up super early every to take hardcore exercise classes before work. Dana, like myself, is a former "fat-phobic" having years of being stuck in a "fat-free" mentality. Years ago, we both worked at a Gold's Gym together (she worked for the gym, me, the rehab center for the Chiropractor), and sometimes would go food shopping together, loading up on fat free mayo, and skinny cows, and so on. Those were the days that I exercised 4 hours a day, and ate nothing but "diet" processed foods. We shared stories of counting calories, and hungry nights where a "binge" on a skinny cows, or 100 calorie packs was the norm. In those days we thought we were doing something right, later realizing how many calories of processed crap we were eating.
Dana, amongst a few other girlfriends, text and BBM me almost daily asking about their food choices...it's pretty cute. It's like having their own "on-call" nutrition consultant. The biggest issue for Dana is eating out all the time for work. It is inevitable with her job, business has to get done, and the clients like to eat. One can understand the frustration, and the confusion on what to eat when this happens. My advice is usually doubling up on the veggies, asking them to steam and maybe toss lightly in EVOO, on top of a salad, or a small piece of fish.
The biggest point that I stress now is to eat mostly PLANTS, eat FOOD (as Michael Pollan would say). Many of us do not understand how far we have gotten away from "eating food." Not to beat a dead horse, but the food corporations really control what we think about food, and what we are eating. Everyone feels they need all these vitamins, and supplements, when all we really need to do is eat food! It's way cheaper than expensive urine , right? When we set our lunch date, displaying an example of what I mean by eating a colorful meal seemed appropriately delicious.
These are the kinds of meals that you do not have to worry about calories or eating too much of, because they are all healthy, fresh, natural ingredients that are straight from the ground on to the plate!
Ginger carrot juice whizzed up in the Vitamix.... thought we would start out by toasting with a shot of Vitamins A, D, E, K B1 & B6 along with numerous anti-oxidants
2 large carrots
1 tsp grated ginger root
1/4 cup of water, or more...add until you reach desired consistancy
Throw it all in Vitamix on Variable II level 10 and blend until smooth
Heirloom Tomato salad was divine. Looooooove those heirlooms! Yum!
Heirloom Tomato-Basil Salad
2 ripe multi-colored Heirloom Tomatoes
1/2 of a small vidalia onion, sliced thin
1/4 cup EVOO
bunch of fresh basil, chopped
Sea Salt & Fresh Black Pepper, to taste
Toss all ingredients together, the longer you let them all marry before serving, the better!
Also made veggies tossed in Tahini Dressing for some Romaine Boats and Cabbage Wraps:
Tasty Tahini Dressing
2 Tablespoons Raw tahini
3 Tablespoons Cold Pressed Oil (EVOO, Hemp, Flax)
Juice of 1/2 a lemon
Pinch of Cayenne
Sea or Celtic Salt & Fresh Black Pepper, to taste
The first time I made this dressing was on Sunday, I made myself some wraps--you can use Bib Lettuce, Cabbage, or Iceberg (if you're careful with the leaves)
Veggies used: Organic- Red Pepper, Cucumber, Carrots Julienne, Avocado & One day I added some sprouts <3 on top of the mix!
But you can what you want...butmake itcolorful!!!!
Today, just tossed all the veggies right in with the dressing to add on top of Romaine boats, and Dana & myself had one wrap & one boat each... we "rotated" our greens for sure!
She was veeeeerry interested in trying the yummy peanut butter soft serve that I felt I perfected this weekend, so I made up a small batch for a very low-guilt, yummy, nutritious dessert--and how could I deny a dear friends wish :P
