Colorful food

Hello Luvs,

I wanted to share with you all how Michelle and I made our pretty pink kelp noodle dish from the other day.


  • 1 bag of kelp noodles
  • 1 large zucchini
  • 2-3 stalks of a green (we used collards)
  • 1 recipe of beet hummus (use as much of the hummus as you would like)
  • sea salt


  • Rinse kelp noodles under cold water and cut up a little (we do this so it is easier to eat).
  • Clean zucchini and spiralize into pasta . (or you can hand cut into thin strips).
  • Clean and chop your green (we always have to have a green)
  • Place all into a large bowl. And toss with the beet hummus . Again use as much of the hummus as you would like.
  • Garnish with some sea salt.

We like mixing our kelp noodles with some green and zucchini pasta because it helps make meal bigger and provide the dish with more texture :)

Love how colorful this dish was and so filling too :) As I was enjoying this dish I was smiling because I just felt so good about eating this dish. Does that happen to you?

Twins Question: What are your thoughts on eating a plate full of color? Do you try to make your meals contain the colors of the rainbow? When you eat a plate that is full of different colors and textures does it affect you mentally? Does it help make you feel good?

Off to go make more round of our raw pumpkin seed cracker , have a huge deadline to fulfill!!
