Coffee Date

Hiya guys!

I am once again swamped with school work and I have no time to write an elaborate post. Instead, I’ll treat you to two fabulous new recipes I concocted yesterday!

Coffee Date Balls
Yields ~ balls
* 1/2 cup walnuts
* 1/2 cup cashews
* 7 fresh dates (or soak dried dates 10 minutes)
* half a packet coffee mocha powder
* 1 T agave (optional)
* dash of salt

Add (raw, unsalted) nuts to food processor and grind/pulse to a coarse consistency. Don’t over process or they’ll become oily. Add dates, coffee powder, salt and optional agave and process to a sticky ball. Form into balls (or bars!) and refrigerate.

These little balls taste amazing and make for great little portable treats. They also make good for instant energy because of the dates (high in glucose). If you wrap some batter in foil you can mold them into bars and store them for later grab-n-go use.

Tropical Green Smoothie
Serves 1
* 1/2 cup cold water
* big handful spinach
* 1 t Maca (optional)
* 1 frozen banana
* 1 handful mango
* 1 T coconut butter (or oil)
* 1 T agave
* 1 T vanilla protein powder

Add water, Maca and spinach to blender and blend the spinach thoroughly. Add other ingredients, except for the banana, and blend until smooth. Finally, add the frozen banana and blend again. The consistency will be very thick, add more water to thin out if desired.
