Just the other day I had homemade coconut milk for the first time, and, I must say, it’s incredible! Had I known it was this good, I would have made it a long time ago. It’s the perfect addition to chia pudding, a smoothie, cereal, or whatever sounds good to you. It’s sweet, rich, creamy and absolutely delicious!
2 cups shredded dried coconut
4 ½ cups filtered water (room temperature)
Soak the dried coconut in the water for 30 minutes and cover it
Put it in a high-powdered blender and blend until smooth
Strain through a chinois, nut milk bag or cheesecloth in a strainer
Add the following ingredients:
2 tsp vanilla extract
2 Tbs agave
Place the strained coconut milk back into the blender, add the vanilla extract and agave, and blend
As with nut milk, you can flavor it with cacao powder or fresh, frozen fruit such strawberries, blueberries, or bananas.
PS – After straining the coconut milk through a chinois or nut milk bag, you can dehydrate the leftover coconut, blend it, and store it to later be used as coconut flour for your favorite pastries.
