Clean Eating Chicken (or steak) Fajitas

This recipe is from last week’s WIAW and it is super easy.

Clean Eating Chicken Fajitas | Fit Foodies. Healthy Life.

Ingredients:

  • 2-3 chicken breasts cubed
  • 1 onion chopped
  • 1 pepper chopped
  • 1 container of rice (I used Spanish)
  • 1 container of low sodium black beans
  • Low sodium chicken broth

Directions:

  • Cook the rice according to package – I used 1/2 water and 1/2 chicken broth for the liquid
  • In a large skillet sautéed onions and peppers until almost cooked
  • Add in enough chicken brother to cover the bottom of the pan and cook chicken on a simmer covered
  • Add seasonings of choice – I used pepper, red pepper flakes and taco seasoning (prior to covering)
  • When chicken is cooked, add cooked rice and black beans to the skillet and mix
  • Serve alone or with tortillas

You can also do this with steak but grill the steak separately and mix it at the end when everything else is done so it doesn’t get over cooked.

And I if I have been slow to answer to emails and messages it’s because my life looks like this right now planning for the wedding….and this doesn’t include school, work or applying for the bar. Yikes!
