Clean Chicken mushroom and spinach risotto (coconut milk)

If you love chicken and spinach risotto but need to stick to a clean diet… (so no butter and no cream) here is a great alternative clean chicken risotto recipe to try and enjoy

clean chicken risotto

Ingredients for clean chicken risotto:

3 cups of fresh spinach
1 Chicken breast
8 mushrooms
1.5 cups of balsmatic rice
1 can of coconut milk
2 onions
2 cloves of garlic
1 tablespoon of olive oil
1 stalk of celery
1 medium size carrot
1/2 cube of salt free chicken stock cube
Add fresh seasonal herbs (I added some marjoram)

Instructions for clean chicken risotto:

Get rice on the boil. Add salt free chicken stock cube to the water. Cook until nearly done (Balsamic rice – cook for 30 instead of 35)

Steam fresh spinach – should reduce to about 1 cup or a little less.

Dice onion and garlic. Cut mushrooms into quarters. Cut celery and carrot into small cubes. Cut chicken into small cubes too.

Fry onion and garlic in a tablespoon of olive oil. when starting to brown add the mushrooms. Stir and let reduce slightly. Add chicken cubes and 1/3 of the coconut milk and let cook for about 5 minutes. Add celery and carrots. Let the ingredients cook on a low heat. After 5 minutes add spinach and rice and rest of the coconut milk. Increase the heat and allow to reduce, keep stirring. (you may need to do this in a pot rather than in the frying pan.
Cook and stir for about 5-7 minutes and your clean chicken risotto should be done.
