High Protein Cinnamon Vanilla Pancakes with blueberry chia jam inspired by Kasey !
Wet ingredients
5 egg whites
few drops of vanilla stevia to taste + vanilla extract
Dry ingredients
1 serving protein powder (I use teras bourbon organic vanilla whey protein)
1/2 teaspoon baking soda
pinch of salt
good shake of cinnamon
Mix wet and dry in separate bowls. Add wet to dry. Cook in coconut oil. Simple as that.
Topping: 1/2 cup wild blueberries mashed with 2 TBS chia seeds and a few drops of water
Obviously, I made one huge pancake since I poured all the batter into a small pan, but you could stack these up and layer the blueberry jam between

You could definitely switch up the egg ratio and use whole eggs, but I’m having them for lunch so I stuck with the extra whites.
