Cinnamon Crepes with Yogurt and Berries

I try to avoid incorporating refined sugar into my diet, but anyone who knows me well can testify that I love to indulge myself once in a while.   I don't advocate eliminating entire food groups , so I think it's definitely acceptable to have a little sugar now and then.  Crepes are thin pancakes that are considered a national dish in France.  They can be filled with various savory ingredients, such as cheese, ham, spinach, and even meat, which is my friend Alex's favorite filling (Hi Alex!).  Additionally, they can be filled with sweet toppings such as simple sugar, fruit, custard, and Nutella.  This morning, I made my crepes healthier by substituting half of the white flour with whole wheat flour and filling the crepes with low fat greek yogurt and berries.  A healthier twist on the common crepe!


Cinnamon Crepes with Yogurt and Berries

2 large eggs 1 Tbsp light brown sugar 3 Tbsp ground cinnamon 1 1/2 cup lowfat milk 2 tsp canola oil 3/4 cup all purpose flour 3/4 cup whole wheat flour 1 container lowfat Greek yogurt Your favorite fruit (I chose raspberries and blueberries)


1.  Blend eggs, brown sugar, cinnamon, oil, and milk on low.
2.  Slowly add flours, 1/2 cup at a time, stopping to scrape down the sides of the bowl.  When batter is thick and smooth, put in refrigerator for 45 minutes (you can also leave it overnight to thicken for the next morning).
3.  Coat an 8-inch skillet with cooking spray and place over medium heat.  Add 1/4 cup of batter to the pan and immediately use a spoon or spatula to spread out the batter.   This step is important in order to get the crepes to be thin.
4.  Cook crepe for 30 seconds or until lightly browned and then flip.  Cook until other side is browned.  Repeat with the rest of the batter.
5.  Spread greek yogurt onto each crepe and then add berries.  Roll up and serve.
