Today was my first time encountering a pomegranate in its whole form. I have tried the pomegranate seeds that come pre-packaged, but I most recently became addicted to these juicy, crunchy little seeds. When I couldn’t find the pre-packaged ones at my grocery store, I thought, how hard can it be to dissect a pomegranate? With the trusty help of Google, I ended up getting into a bloody battle with the seeded fruit. I cut it every which way and then tried popping the seeds out with the help of my fingers, but the red juice ended up flying everywhere. This is one of those times where you think, Wow, thank goodness I’m wearing all black. It ended up on my forehead as well.
Aside from the many spoonfuls of the seeds I consumed during this process, I had a clear goal in mind. Smoothie.
1/2 of a Sambazon frozen Acai berry smoothie pack
1 cup frozen strawberries
1 cup cranberry juice
handful of spinach
1 scoop chia seeds
1 heaping tablespoon organic cacao powder
I topped that with the pom seeds, and OhMyGoodness. It was like a deep chocolate pomegranate pudding. How amazing does that look?! This is happening again tomorrow morning FORSURE.
The dogs looked so bored today and I felt bad for them. This last week has been rainy and miserable and they haven’t had a chance to play outside that much, so I decided to take them to the dog park to run around.
Well they definitely did their share of running, and I did too. Oh and Hey! Adam & I went for a run around the town he lives in yesterday, and it was absolutely perfect weather. Running with him kept me motivated to keep moving and pushing myself. We took a short break to walk around the waterfront & look at the gorgeous tulips, then kept on running. When we got back, my quads were burning, but they didn’t hurt that bad! Nothing like the pain of pulling them. So my body is definitely getting used to running
Back on topic, both the dogs felt it was necessary to ROLL around in the only muddy section of the dog park. Typical. When dinner time rolled around, I was feeling a stir fry with the leftover quinoa I had in the fridge.
Teriyaki Shrimp & Quinoa Stir Fry
1 small-medium red bell pepper, chopped
1/4 cup edamame
some sugar snap peas!
1/3 cup frozen, cooked, and de-tailed shrimp
a handful of spinach
I tossed all of that around a frying pan, adding the spinach at the last minute of course, and then added a tablespoon of organic teriyaki sauce from Whole Foods. I finished it off with a squeeze of lemon and poured it over my quinoa. This stir fry made me adore quinoa even more. It’s just as versatile as any pasta or rice, and it’s so healthy.
I cannot wait for tomorrow. I have the day off work, and I’m spending it outside and going on an adventure out in the county! Should be fun times. Can’t wait to show & tell
