"Chocolate-Covered" Strawberry Oatmeal!

Hello bloggie friends!

Grocery shopping yesterday was fantastic and I stocked up on lots of fresh veggies, apples, bananas, sweet potatoes, chicken breasts, yogurt, whole wheat bread, and...peanut butter! This isn't my favorite brand of peanut butter, but it will have to do since it was the only all natural brand I could find! Walmart has apparently stopped carrying Laura Scudder's all natural peanut butter and Albertson's didn't have the Laura's or Smucker's brand! I was very sad indeed, but I am thinking since I am not too fond of Adam's it may just help keep my peanut butter noshing at bay ;)

For breakfast I had a bowl of "chocolate-covered" strawberry oatmeal! It was delicious and tasted just like dark chocolate covered strawberries! In the mix is 1 cup oatmeal, 1/2 scoop chocolate protein powder, 1 T Hershey's unsweetened cocoa powder, and 1/2 cups defrosted frozen strawberries. In all seriousness, who wouldn't want to start their day out with chocolate covered strawberries? Especially when it's only 248 calories! AWESOME! I HIGHLY recommend this protein-packed breakfast as a GREAT morning meal that is sure to get your day off on the right foot.

Lunch consisted of a tuna sandwich on a slice Earthgrains bread (I completely spaced getting Ezekiel bread while I was out and about yesterday!) and LOTS of veggies; both roasted and raw. A very tasty and filling 300 calories! I'm not sure why but lunch time is always the perfect meal for me to pile my plate high with veggies ;)

For a mid-afternoon snack I whipped up some peanut butter banana "pie"! I used Yoplait's Greek yogurt, less than 1/4 cup sliced banana, and 1 T of Adam's all natural peanut butter. This was super yummy! Unfortunately, the yogurt itself wasn't entirely clean. Greek yogurt is nothing more than drained regular yogurt. The fact that it's drained of all the liquids is what gives the yogurt it's thick consistency. So why Yoplait added gelatin to their Greek yogurt is beyond me. I guess draining it the good old fashioned way was beyond what they could handle. Promise me you will buy REAL clean Greek yogurt if and when you choose to give it a try ;)And of course, be sure to try my peanut butter banana "pie" when you do for only 234 calories. YUM!

For dinner I made myself and my family some baked chicken with brown rice and Rotel diced tomatoes. It was phenomenal and I am proud to say that my hubby really enjoyed it as well! That is actually a picture of my hubby's plate. Mine was much smaller.

The Rotel diced tomatoes weren't entirely clean since most canned goods contain a chemical called BPA (unless it is the Eden brand). Rotel also adds calcium chloride to their tomatoes as a firming agent, so I may try to make my own spicy tomato sauce next time! Other than the "unclean hiccups", the meal was amazing :)

Lastly, I had a dashing Pink Lady apple with a tablespoon of all natural peanut butter and cinnamon. Light, healthy, and only 185 calories!
