Chocolate Chip Protein Muffins

Hello, hello!  It’s Thursday and today is, technically, my Friday since I have the day off tomorrow so I am feeling all antsy-in-my-pantsy for today to go quickly!  Well, I mean, I don’t want it to go too quickly (I hate rushing time) but I’m ready to start what will be my four-day weekend!

Anywhoooo…in our house, we will go weeks, even months, without a baked good anywhere near us.  Then, just like that, I make a pie and muffins in one week.  Not to mention the snails and the cranberry-pumpkin bread that my mom and grandma sent home with me.  Oh my goodness.  I feel jittery just talking about all that sweet stuff.


It’s kind of crazy, but I am not really a ‘sweets’ person.  I like savory.  I like dinners.  I like pastas.  I like rich and hearty meals.  But, sweets?  Eh.  I can take ‘em or leave ‘em.  Well, unless, of course, you put a piece of cheesecake in front of me.  Then, all bets are off.  I can become a madwoman.  Speaking of being a madwoman, are any of you out there dressing up for Halloween?  Usually, I start thinking of my costume in August and spend all of September and October perfecting it.  This year?  I got nothin’.  Absolutely nothin’.  I have no plans, no costumes, and not even any ideas for any costumes.  I need to snap out of whatever “costume-block” I’m having and get on the ball here!

Alright…we’ve talked about time going quickly, sweets, and Halloween costumes all in under a minute.  Let’s bring it back.  I made muffins.  I added some protein.  I added some chocolate.  That’s really all you need to know.


Chocolate Chip Protein Muffins

(I used a Hungry Girl basic recipe and switched it up a bit!)


1 cup whole-wheat flour

1/4 cup granulated sugar

3 tablespoons brown sugar (not packed)

1 scoop protein powder (I used Visalus Sweet Cream Shake mix)

1-1/2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup low-fat or skim milk

1/4 cup light maple syrup

1 egg

2 tablespoons light butter spread

1/2 teaspoon vanilla extract

1/4-1/2 cup semi-sweet chocolate chips


Preheat oven to 400 degrees.

In a large bowl, whisk together flour, sugar, brown sugar, protein powder, baking powder, and salt.

In a second large bowl, whisk together milk, syrup, egg, butter, and vanilla extract.  Add to the dry mixture and whisk together until smooth.  Add the chocolate chips and fold until evenly distributed.

Line a six-cup muffin tin with cupcake liners and distribute batter evenly between each cup.  Bake for 20 minutes or until a toothpick inserted in the center of the muffin comes out clean.

Yield: 6 servings




…maybe I could go as a giant piece of cheesecake for Halloween…
