Sometimes you just need some blondies in your life (and I’m not talking about Hugh Hefner’s girls).
I’m talking about good old-fashioned melt-in-your-mouth blondies. Only these were anything but old-fashioned.
I made a healthier blondie, healthier although not really healthy. If that even makes sense. Maybe next time I’ll go all-out-healthy—but this time it was all about convenience.
And convenience came in the form of a box of Duncan Hines Banana Supreme Cake Mix.
Chocolate Chip Banana Blondies
1 package Banana Supreme Cake Mix
1/4 C. egg whites
1/4 C. almond milk (any kind would work)
1/2 mashed-up banana
1/2 C. chocolate chips
Add everything except for the chocolate chips to a large mixing bowl. Mix well with a hand-mixer/whisk/kitchen-aid (if your lucky).
Once the mixture is uniform, fold in the chocolate chips.
Note: the mixture should be very thick, not runny. This is what you want!
Spread evenly in a greased baking pan.
Bake at 350 degrees for approximately 25 minutes (or until a toothpick comes out clean)!
Enjoy!
The best part? You can make these with ANY cake mix!
Ideas:
Pumpkin
Spice Cake
German Chocolate
French Vanilla
Funfetti
Don’t like banana? Sub in:
Pumpkin Puree
Applesauce
Greek Yogurt
Don’t want chocolate (you might be crazy)—but sub in:
Butterscotch Chips
White Chocolate Chips
Nuts
Shredded Coconut
You get the picture—the possibilities are endless!
You’ll probably be seeing more variations of this! Maybe I’ll even go all-out-healthy and nix the cake mix next time. You never know.
