Chocolate Banana Bread Bites

I am a sucker for really good looking baking recipes, especially when I have the ingredients, and they are simple! I saw this recipe on Megan’s blog at Runner’s Kitchen and tried it over Memorial Day weekend.

Coconut-Chocolate-Banana Bread Bites:

2 ripe bananas, mashed
3 Tbs canola oil
3 Tbs maple syrup
1/2 tsp vanilla extract
1 cup oats
2/3 cup teff flour
1/2 cup unsweetened coconut
1/4 tsp baking soda
1/4 tsp sea salt
1/3 cup chocolate chips

Preheat oven to 350 F degrees
Combine the banana, oil, maple syrup, and vanilla in a large bowl
In a medium bowl, combine all dry ingredients except chocolate chips
Add the dry ingredients to the wet ingredients in 2-3 increments, stirring just until combined
Stir in the chocolate chips
Drop heaping teaspoons of batter onto a parchment lined cookie sheet and bake for about 13-15 minutes, until lightly browned
Makes about 20 cookies

**These are vegan (if you use all vegan ingredients–especially the syrup and chocolate chips) and gluten free (if you can tolerate oats). The whole process was under 30 minutes, including cleanup. Not even a mixer was needed. I also used sil-pats on my baking sheets instead of parchment paper. Silicone is great for baking cookies if you haven’t baked with them before. Cookies were not sweet and kind of tasted like a healthy cookie. You try them and tell me what you think!
