When we’ve had a particularly social weekend, I crave broccoli come Monday night. It seems to make amens for any excess and makes me feel alive again. Rather than just do the same boring old steamed broc I thought I’d try something different this week.
2 x bunches of fresh broccolini
1 x punnet of cherry tomatoes
2 tbsp avocado oil and extra for finishing
1 x red chilli, deseeded and chopped
2 x garlic cloves, crushed
1/2 a lemon
Pop a pot of water on to boil and enough spaghetti for 2 small serves
Heat oil in a frying pan and add garlic and chilli, cook for 1 minute
Add broccolini to the pan along with enough water to cover the bottom of the pan
Pop a lid on it for 3-4 mins until the broccolini is tender
Remove the broccolini and simmer the remaining liquid until it is reduced by half
Add the broccolini and liquid to the spaghetti
Toss in some halved fresh cherry tomatoes and finish with a squeeze of fresh lemon juice and a sprinkle of sea salt, cracked pepper and a splash of oil
