Chilli Broccolini Spaghetti

When we’ve had a particularly social weekend, I crave broccoli come Monday night. It seems to make amens for any excess and makes me feel alive again. Rather than just do the same boring old steamed broc I thought I’d try something different this week.


Serves 2

2 x bunches of fresh broccolini
1 x punnet of cherry tomatoes
2 tbsp avocado oil and extra for finishing
1 x red chilli, deseeded and chopped
2 x garlic cloves, crushed
1/2 a lemon

  • Pop a pot of water on to boil and enough spaghetti for 2 small serves
  • Heat oil in a frying pan and add garlic and chilli, cook for 1 minute
  • Add broccolini to the pan along with enough water to cover the bottom of the pan
  • Pop a lid on it for 3-4 mins until the broccolini is tender
  • Remove the broccolini and simmer the remaining liquid until it is reduced by half
  • Add the broccolini and liquid to the spaghetti
  • Toss in some halved fresh cherry tomatoes and finish with a squeeze of fresh lemon juice and a sprinkle of sea salt, cracked pepper and a splash of oil
