Dinner was quick tonight, thanks to me preparing my food for the week on Saturdays!
Chili is one of my favorite meals. I absolutely love the combination of chili, mexican cheese, sour cream greek yogurt, and multi grain corn chips.
I used AmyBites recipe, but subbed out Trader Jose’s (Trader Joe’s, love their humor) frozen roasted corn in place of the turkey, plus I added white kidney beans.
On the side, I had some of TJ’s chips and tried out the new Quorn meatless meat-balls that I picked up this weekend.
Verdict: Would be really awesome on a sub with red sauce and mozzarella cheese, but not bad chopped up in chili.

Today, Monica posted the Pile on the Miles spreadsheet. The idea of Pile on the Miles is to encourage us to pile on the miles and not the pounds this November. I have been having no pain while running lately, knock on wood!
Secondly, I signed up for the Great Food Blogger Cookie Swap of 2011 . Go check it out! I can’t wait to get some new and different sweets to try, and come up with a fun recipe to prepare and mail out.
I get a workout just pushing this thing into the kitchen from the front door. It was filled with grossPure Protein shakes for Joe, Isopure protein powder to share, and some other goodies I threw in my basket before checking out.
Now I’m off to study a bit and get some sleep. I may be late in posting tomorrow, but I get to meet Julie Andrews (Mary Poppins, The Sound of Music, Princess Diaries) because of an event we are holding at work. How fun!
