Last night some of the girls came over to celebrate one of our friend’s birthdays! We each made something for the occasion. I was in the mood for something warm, delicious & easy so I whipped up a chicken & white bean chili in the slow cooker!
It was my first time using dry beans & I was pleasantly surprised with how easy it was to prepare them! Just soak for 2 hours and boil for 10 minutes in chicken stock before putting everything into the slow cooker.
I sautéed these veggies for 10 minutes while the beans boiled away: green chiles, corn, onions & garlic.
Then I laid 2 chicken breasts in the bottom of the crock pot and covered with the sautéed veggies and boiling stock & beans… turned the slow cooker on high and went for a run!
I love the consistency of shredded chicken in my chili, so after 3 hours I fished out the chicken breasts and shredded them on a cutting board with 2 forks. It required almost no effort because the chicken was so tender!
I put the chicken back into the slow cooker, gave it a good stir, and served it in big ceramic bowls and topped it off with some healthy, homemade cornbread! I am still perfecting that recipe, but everyone seemed to enjoy it. Lucky for me there are still plenty of leftovers!
