• 1 large chicken breast
• 1 thumb size piece of ginger
• 1 teaspoon of coriander seeds
• 1 small onion
• ½ a green pepper
• 5 cherry tomatoes
• 1 tablespoon of soy sauce (low sodium)
• 2 servings
• 20 minutes
Cut the chicken up in to large chunks. Grate the ginger. Dice the onion, cut the pepper up into thin strips and cut the cherry tomatoes in half.
Add the onion to the fry pan and fry lightly. Add the grated ginger and coriander seed and add the chicken. Cook for 15 minutes. Add the soy sauce whilst the chicken is cooking and keep stirring.
Finally add the green pepper and tomatoes and cook for another 2-3 minutes.
