• 1 large chicken breast
• 1cup of lettuce
• ½ can of kidney beans
• ½ green pepper
• Dressing: Balsamic vinegar and olive oil.
• 2 servings
Prepare the chicken breast by boiling the breast in some water for 15 minutes. Set it aside and allow to cool.
Wash and cut up 1 cup of lettuce and place that in the middle of the plate.
Cut the green pepper up into cubes and open and drain ½ a can of kidney beans. Add this to the top of the lettuce.
Finally chop the chicken up into chunks and add it to the top of the plate. Drizzle with balsamic vinegar and olive oil.
