For lunch today I was craving more delicious rice from my new rice cooker.
Today is a carb-heavy day for sure [had oatmeal for b-fast] and that doesn’t bother me one bit.
I used random ingredients from my kitchen to create a tasty lunch.
1 cup chopped fresh spinach
2 tbs. chopped fresh parsley
1 small diced tomato
1 oz fresh and local goat cheese
chipoltle powder, garlic powder and sea salt to taste
In a medium pan I combined cooked rice, spinach and parsley on low/med heat.
Next I added the spices and melted the goat cheese in.
Lastly I added the diced tomato and combined evenly.
Simple!
You could switch up the herbs and veggies for many cheesy rice bowl combos.
