Broccoli is a staple food in our house as a side for dinner. I absolutely love it, I love it so much that my senior year of college my roommates and I went through a phase where we would eat an entire bag of frozen broccoli for dinner with a little garlic salt and maybe a sprinkle of cheese, strange but healthy. Yesterday, I decided to change it up and saute it with a tablespoon of coconut oil.
Ingredientsfresh broccoli, washed and chopped 1 1/2 Tbsp coconut oil 1 chopped clove of garlic Juice from 1/2 of a lemon
Directions1) In a medium to large skillet heat the coconut oil on medium heat, until it melts in the pan and becomes very hot. 2) Add broccoli to the skillet and stir occasionally, about 4 minutes until broccoli is soft, but not burnt. 3) Add the garlic and cook for another 2 minutes or so. 4) Remove from heat and add the fresh lemon juice and stir.
ENJOY! The coconut oil gives it a little sweetness and a nice bit of extra flavor.
I received this sample of Tropical Traditions coconut oil a few months back and have been enjoying it in baked goods and with cooking. It has a nice light flavor, and goes a long way.
