Ok, have you heard about cauliflower rice?
According to Pinterest and other food blogs, I'm super late to the party. This isn't really much of a surprise though. I'm not exactly cutting edge when it comes to my kitchen creations.
I do recall reading about this somewhere a few months ago and thinking like it sounded like a novel idea. However, my inner five year old caught hold of me and I just couldn't overcome my disdain for cauliflower. I've never liked it much on its own. Even when my mother would cover it in a nice cheese sauce, I still didn't like it. And that is saying a lot. There isn't much I wouldn't eat after it has been covered in cheese.
By the way, I keep reading that last sentence and thinking to myself that I need to freshen up on double negative usage. It sounds correct to me, but it's probably because I've read it twenty times. I apologize if my grammar isn't spot on today.
Cilantro Cauliflower RiceModified from this recipe
1 head cauliflower, core removed
2 tbsp melted butter
3/4 cup finely chopped cilantro
Juice from two limes
1 tsp garlic salt
S&P to taste
In your food processor, pulse the cauliflower head until it is finely chopped. Place cauliflower pieces in a microwave safe bowl, and microwave for 5 minutes.
Stir in butter, cilantro, lime juice, garlic salt, and salt and pepper. Mix together and adjust seasonings to taste.
I have to admit, this was pretty awesome. Despite my house smelling like steamed cauliflower for several hours, I was very pleased with the outcome. It could easily have been mixed into a taco salad as rice, but we ate it as a side. Even Wes who loathes cilantro, thought it was good.
I'm still praying that his tastebuds will eventually change and he will one day worship cilantro. I know this is highly unlikely.
