Cut the cauliflower into smaller chunks and place them in a baking dish. Cut the carrots into big slices and place them between the cauliflowers. Season with salt and olive oil. Bake for 15 minutes.
In the meantime cut the old bread into little cubicles, add the dried herbs and the olive oil and mix well. On the 15th minute of the baking process add the bread and bake for another 15 minutes. I didn’t added the bread in the beginning, because I wanted it to be a little bit moist, not dry.
When the whole thing makes 30 minutes in the oven – place the sliced yellow cheese on top and put it back for 5 more minutes with the upper coils on. Serve warm with a fresh salad on the side
