I’m kind of obsessed with salad dressings lately. Maybe because I’m eating a giant salad almost everyday for lunch! For the past several months, I’ve been using my Green Goddess dressing on nearly every salad. Having a delicious, nutritious dressing is absolutely necessary for me to enjoy a salad for a meal. I also try to vary the “goodies” to keep things interesting. This one had steamed broccoli, toasted tempeh and cooked beets:
Another one had lentils, pine nuts, cucumbers and re-heated frozen asparagus:
Lately, I started to think it was time to experiment with other dressings. So, I added orange juice and raw cashews to the simple base of a ripe avocado, garlic and vinegar. As many people know, cashews whirled in a blender transform into a wonderful, creamy consistency. The orange juice flavor was not overwhelming and the overall dressing was very flavorful. I hope you enjoy this dressing, I am loving it.
1/2 cup white balsamic vinegar (you may need to add more to thin out the dressing)
Directions:
In a high-speed blender, process all ingredients. Add more vinegar if necessary for the right consistency. Store in an airtight container in the fridge for up to 5 days.
This photo doesn’t quite showcase the dressing very well, but it is very creamy. I tossed my greens with the dressing and then served this salad with some chopped bell pepper, cucumber, micro greens, radishes, tempeh and chopped onion.
I have been experimenting with how I post photos on my blog. It’s been a bit of a learning process using WordPress as my blogging software. I’ve also been playing with my camera in general. Yesterday I annoyed my cats by taking their picture:
That’s Xena on the footrest and Roxy on the chair. You can’t tell, but they are having a bit of a showdown because Xena would much prefer to be in the chair. “Too bad!” Roxy told her in cat-speak. Carrie’s Cashew Cream Orange Salad Dressing – Serves 4-6
Ingredients:
1 medium ripe avocado
1 cup freshly squeezed orange juice
2 garlic cloves, chopped
1/2 cup raw, unsalted cashews
1/2 cup white balsamic vinegar (you may need to add more to thin out the dressing)
