This is another one of those stupid-easy recipes that I’ve been resorting to. It’s a super-quick way to slap some dinner on the table. I find it an easy way to incorporate veggies because stir-fried cabbage is slightly sweet, and is still crunchy while at the same time a little wilted. This is kind of addicting, but hey, I’m not gonna complain if you eat more than your portion of cabbage! Strive for 5-9 servings of produce a day – the more, the better!
Serve this with some tofu on the side, and brown rice, and you’ve got yourself a perfectly healthy meal.
Cabbage and Edamame Stir-Fry serves about 4
2 tsp canola oil
1 tsp minced ginger
2 large cloves garlic, minced
10 oz (about 4 cups) shredded green cabbage
1 cup edamame
1 tbsp hoisin sauce
1 tsp sesame oil
1/2 tsp freshly black pepper
Over medium-high heat, heat the canola oil. When hot, add the ginger and garlic. Stir-fry for a minute or two, then add the cabbage and edamame. Saute for about 4-5 minutes, until cabbage is slightly wilted. Take off the heat and stir in sesame oil and hoisin sauce until well-incorporated. Top with freshly cracked black pepper and serve immediately.
