Hope your Friday is going well. Does anyone else think today’s post title sounds like something out of Harry Potter?
I’m just home having lunch on my break. One thing I do love about my current job is being able to just pop home for lunch on days when I feel like it.
After spending last night testing out pumpkin banana bread recipes to share on the blog – I think I finally found a winner (!) – I decided it would be best to load up on veggies for lunch:
kale, zucchini, broccoli and a chunk of butternut squash I also roasted last night – if you’ve never made your own, it’s incredible – I just cut mine into large chunks, sprinkled with a little olive oil and roasted skin side down at 400 degrees for about 40 minutes and it turned out great.
I topped my salad with TJ’s goddess dressing and it hit the spot.
Speaking of Trader Joe’s – has anyone been recently and seen these?
mini cinnamon brooms!
Every year I look forward to the season when Trader Joe’s starts carrying their cinnamon brooms in the store – if you’ve never seen one, they smell amazing – and I was so excited to see this miniature version while I was in the checkout line last night. I picked up one for myself and one for my mom. Now my whole kitchen smells like cinnamon. And pumpkin banana bread.
